Very fresh egg pasta from Campania, in a tray. Pappardelle, a Tuscan shape, are 2 to 3 cm wide, much wider than tagliatelle.

The egg pasta is silky and absorbs the sauce. The name comes from pappare, "to eat with gusto".

Serve them with a wild boar stew, a mushroom sauce or meat braised over a low heat.
