Dried pasta from Campania, made with durum wheat semolina, based on the Apulian shape. The centre is thinner than the rim, giving a soft heart and a firmer ring.
The outside is rough and the inside smooth. The cup scoops up vegetables, meat or cheese cream.
Serve them with broccoli rabe, garlic, anchovies and chilli, with a tomato sauce with ricotta forte, or with courgettes, cherry tomatoes and pecorino.
