Long hollow tubes of dried durum wheat semolina pasta, to be broken by hand before cooking. The shape for Campania's slow-cooked sauces.
Dried pasta from Campania, made with durum wheat semolina, in smooth 54 cm tubes. The name, "candles", comes from the tapers carried in processions.
They are broken by hand into irregular pieces before going into the water. The small fragments then thicken the sauce, and the hollow inside holds it.
This is the pasta for genovese, an onion and beef sauce, and for Neapolitan ragù.
