Fresh pasta from Campania, made with durum wheat semolina. They are large, short, smooth tubes, wider than rigatoni and much shorter than paccheri.
The pasta holds up well during cooking. On the plate it blends in with the squid rings, and plenty of sauce gets into the tube.
The basic dish combines squid, cherry tomatoes, garlic, parsley and a little chilli. It also goes with white fish and swordfish stews.
