The tuna's roe sac is removed whole, salted, pressed and then air-dried. It is sometimes called the parmesan of the sea.

Packing in portions saves opening a large piece. Each portion is opened when needed.

Grated, it seasons pasta with oil and garlic. In thin slices, with olive oil and lemon, it is served on toasted bread.
