The pumpkin flesh is cooked and then blended into a smooth cream, a bright orange in colour.

The flavour is mild and slightly sweet, the texture thick.

It serves as the base of a pumpkin risotto, fills lasagne or ravioli, and is spread as the base of a white pizza with pancetta or gorgonzola. It can also be spread on crostini.
