Filled pasta sold fresh, with a cured ham filling. The tortellino is a small square of pasta with a filling, folded into a triangle and then wrapped around the finger.

The pasta is thin and the mouthful small.

Traditionally they are served in a clear capon or beef broth. They can also be sautéed with cream or served with a ragù.
