White tuna, or albacore (Thunnus alalunga), is caught in the Mediterranean and processed fresh, in Italy. The fillets are steamed and jarred with no preservatives or flavourings.

It is a species prized for its delicacy. It shows best in simple dishes, a white bean salad, a vitello tonnato or cold pasta with lemon.
