Small tubes with crosswise ridges, dried pasta made with durum wheat semolina. For ragù and cream sauces.
Dried pasta from Campania, made with durum wheat semolina, based on a shape from Emilia-Romagna. The name comes from the pettine, the wooden comb on which the rolled square of dough is pressed.
The ridges run across the tube. Where the dough is sealed there is a double thickness on one side, which varies the bite.
Serve them with a Bolognese ragù, a cream and ham sauce, or a pumpkin or chestnut cream.
