Dried pasta from Campania, made with durum wheat semolina. These are wide, short tubes, like paccheri cut in two or three.

The thick wall holds al dente and the sauce clings inside and out.

The basic dish combines squid rings, cherry tomatoes, garlic and parsley. It also goes with octopus, firm-fleshed fish, or fried aubergines and courgettes.
