Dried pasta from Campania, from the coloured range. The shape is that of cortecce, small strips rolled like bark and open in the centre.

The pasta stays firm and holds up well during cooking. The colours show best with a simple sauce.

Serve them with olive oil or butter and sage, with asparagus or peas, or cold in a buffet salad.
