Straight ridged tubes of dried durum wheat semolina pasta. The shape for meat sauces and amatriciana.
Dried pasta from Campania, made with durum wheat semolina. Rigato means "striped". The tubes are cut straight and run through with deep grooves.
The ridges catch the sauce and grated cheese. The thick wall keeps the pasta firm under a dense sauce.
Serve them with a ragù, all'amatriciana with tomato and guanciale, or alla Norma with aubergines and ricotta salata.
