Extra-large buffalo mozzarella from Campania, made with raw milk, to cut in front of the guests.
The zizzona, also called mozzata, weighs from one to several kilos. Its shape recalls a breast with a nipple in the centre, and the milk that flows when it is cut completes the picture.
Long a local speciality, it became known from 2010 onwards thanks to the film "Benvenuti al Sud".
It has the thin skin and layered paste of a buffalo mozzarella. Set whole in the centre of the table or buffet, it is cut with a knife and shared with tomatoes, cured ham and olive oil.
