This is pork belly that is salted, seasoned and aged flat, without smoking. The slices show clear bands of lean and fat.

Raw, it is laid on warm bread or crostini, where the fat melts slightly. Cooked in a dry pan, it turns crisp and goes with eggs, a salad or a burger.

Wrapped around a chicken fillet or asparagus, it protects them during cooking.
