It is made only from pork, combining lean cuts such as shoulder and fatty cuts such as belly, medium-ground.

Stuffed into a natural casing, it has pink, juicy meat that holds up well during cooking.

It is grilled whole, pan-fried in chunks or crumbled into a white ragù, a risotto or onto a pizza. Cook it right through before serving.
