Pancetta tesa is pork belly that is salted, seasoned and aged flat, without smoking. Diced, it saves cutting work in the kitchen.

The cubes alternate red lean and white fat. Over medium heat the fat melts and the meat browns, giving the base for a carbonara, pasta with peas or pan-fried vegetables.

The rendered fat can replace oil for softening onions.
