Dried pasta from Campania, from the coloured range. The shape is still that of strascinati, long and flattened, with one smooth side and one rough side.

The large irregular surface holds the dressing.

To keep the colours visible, serve them with olive oil and garlic, with courgettes or peppers, or with a few shavings of ricotta salata.
