Long, flat dried pasta made with durum wheat semolina. The shape for clams and light sauces.
Dried pasta from Campania, made with durum wheat semolina. Linguine means "little tongues". The cross-section is flat and narrow, between spaghetti and fettuccine.
The pasta stays firm at the core when cooked al dente and coats well in emulsified sauces.
Serve them with pesto, with seafood, with clams, garlic and parsley, or with olive oil and lemon zest.
