Scamorza, a pear-shaped pasta filata cheese, plain or smoked, that melts without releasing water.
A cousin of mozzarella, scamorza is dried briefly, which gives it a firmer, more elastic texture. A string ties the top of the pear.
The plain version is ivory white, with a mild, milky flavour. The smoked one has an ochre rind with woody notes around a mild centre.
It melts evenly without releasing water. Sliced and cooked in a pan or in the oven, it goes with grilled vegetables, and it tops pizzas, gratins and hot panini.
