Anchovy paste in a tube

Fresh anchovies are salted in barrels and left to mature, then desalted and ground with a little olive oil. Made in Campania.

The proportion of oil stays moderate, which gives an almost solid texture. The tube closes again after use and lets you use only the amount you need.

A few centimetres are enough for a tomato sauce, a salsa verde, a Caesar salad dressing or an anchovy butter for grilled meat.
