Description

This seafood ragù is prepared in Campania with flying squid (totano), a Mediterranean squid.

It is heated over a low heat and coats short pasta or linguine. A little pasta cooking water helps bind the sauce, and fresh parsley finishes the plate.

It also tops a hot bruschetta or goes with plain rice.
