A vegetable cream from Campania, made from finely blended beetroot and labelled as gluten-free.

Its colour is a deep magenta red. The flavour is sweet and slightly earthy, with the natural sweetness of beetroot.

Spread it on crostini with a fresh goat's cheese or a feta. Loosened with a little stock, it colours a risotto or coats pasta. It also goes with smoked fish.
