The cherry tomatoes are partly dried (semidried) and then jarred under sunflower oil. They lose some of their water but keep a fleshy pulp, far from the firmness of a sun-dried tomato.
The flavour is concentrated, sweet and tangy, and the flesh melts in the mouth.
Drained, they go on a pizza after baking, accompany a mozzarella di bufala, enrich a pasta salad or are served as an aperitivo. The fragrant oil from the jar can be used to finish a dish.
