Sheep's milk pecorino aged for about four months, mild at first and lingering. Cut to order or grated.
It is made solely from sheep's milk from the Tuscan province whose name it bears. Ageing lasts about 120 days on fir boards.
The interior is white and crumbly, with very few holes. The flavour is mild at first, then long on the palate. Serve it in chunks with honey or grate it over pasta.
