Sheep's milk primo sale, the youngest of the Tuscan pecorinos in the range. Mild and light, it makes a starter or can be grilled.

It is aged for only about a week. The rind is thin and white.

The interior is soft and elastic, with irregular holes. The flavour stays mild and milky. Serve it with tomatoes and olive oil, in a vegetable carpaccio, or seared in a pan.
