Very fresh pasta from Campania, in large sheets for layering. This version is made with durum wheat semolina.

The flat, porous pasta takes up the sauce and binds with the other layers as it bakes.

The classic assembly alternates ragù, béchamel and parmesan. The top turns crisp and the centre stays soft.
