The black olives are ground with sunflower oil, garlic, basil and a little wine vinegar. A Sicilian recipe.

The flavour is intense, with a slight bitterness. Spread it on toasted bread, on a tart base before adding the filling, or stir a spoonful into a tomato sauce.
