Storage
Store in a dry place away from light; once opened, refrigerate and keep covered with oil

Sun-dried tomatoes, crushed green olives, black olives, artichokes and aubergines are combined in sunflower oil with a little wine vinegar. A Sicilian preparation.

Serve it drained on an antipasti platter, with cured meats or cheese. It can also be roughly chopped to top a focaccia or to liven up a rice salad.
