They come from the preparation of yellowfin tuna fillets and are trimmed by hand. Prepared in Campania.

Being cut into small pieces makes them easy to portion. They are added to a rice or pasta salad, mixed into mayonnaise for a vitello tonnato or used to top a pizza.

With tomato, capers and olives, they also make a quick pasta sauce.
