Carnaroli rice, chosen because it holds its shape during cooking, is mixed with 1 % dried summer truffle (Tuber aestivum) and a flavouring. Made in Tuscany.
During cooking, the grain absorbs the aroma. The risotto is then finished with butter and parmesan.
For a richer dish, add sautéed mushrooms, shavings of fresh truffle or a spoonful of truffle cream at the end of cooking.
