Store in a dry place, away from light; once opened, refrigerate, keeping the product well covered with oil

The tomatoes are dried and then jarred under sunflower oil, which softens them.

The flavour is intense and slightly tangy, the flesh firm and meaty, far more powerful than a fresh tomato.

Drained, they are served as an antipasto, chopped into a pesto rosso, used to fill a panino or to give depth to a pasta dish. The large jar suits kitchens that use them every day.
