The sheep's milk is not pasteurised. The cheese is aged for about 40 days in Tuscany.

The rind stays thin, the interior is straw yellow with irregular, evenly spread holes. The flavour is intense and clean. Offer it to customers looking for a fresh cheese with character, with country bread and a light red wine.

Raw milk cheese, not recommended for pregnant women or young children.
