Description

Italian tomato pulp is cooked with fresh aubergines, extra virgin olive oil, garlic and basil. It is the classic sauce for pasta alla norma from eastern Sicily.

Heat it and toss with maccheroni or rigatoni. Finish with grated ricotta salata and a few basil leaves.
