The green olives are crushed so the seasoning soaks into the flesh, then prepared with garlic, oregano, chilli, sunflower oil and wine vinegar.

The flesh is firm and the flavour lively. Serve them with aperitifs or on an antipasti platter. Pitted and chopped, they add zest to a salad, a tomato sauce or a focaccia.
