Store in a dry place away from light; once opened, refrigerate and keep covered with oil

The artichokes are halved and preserved in the Sicilian country style, in sunflower oil with oregano, garlic, chilli and wine vinegar.

The halves look good on the plate. Use them as an antipasto, on a pizza or focaccia, or in a pasta dish. Drain them and keep the oil for cooking.
