Description

Fresh courgettes are sliced, grilled, then covered with sunflower oil, garlic, chilli, parsley, salt and wine vinegar. A Sicilian recipe.

They stay tender and keep their chargrilled taste. Serve them as a starter, in a cold pasta salad or in a sandwich with mozzarella. Drain them before plating.
